How can I add pennies, nickels, dimes, etc., to calculator for open/close amounts?

Store Operations Manager, Database, Tender Types, Cash, Properties, Denominations.

If you want to sort the list alphabetically by description, create entries like this:

a-Pennies    .01
b-Nickels     .05
c-Dimes      .10
d-Quarters  .25
etc. (Dollars, Fives, Tens, Twenties..)

Save changes, then close POS and log back in.
Select F5 Open/Close then enter opening or closing amounts by clicking Calculate button.
Example, 23 pennies, 12 nickels, 14 dimes, etc. 

Note: If you add/remove tender types you must Z out all registers for those changes to take effect. This is not necessary if you change only the properties of an existing tender. In that case simply close POS and log back in to see your changes.
